The apple cake
Rønhave's homemade apple cake
For us, it is important that a cake stays fresh. It must be able to withstand being frozen, thawed and left out for half an hour without becoming dry. That is why we have also tried some recipes before choosing them for our breakfast service.
Some people might think that it is easier to order cakes and pastries as a bakeoff. It is, but as previously written, we like to put a personal touch on things. We also take great pride in serving something we have made ourselves and creating a homely, cozy atmosphere.

Apple cake with almonds
This is the most delicious and flavorful apple cake we have ever baked. The addition of almond flour gives it an absolutely amazing flavor. Serve with creme fraiche, whipped cream or vanilla ice cream.

Ingredients
- 250 g. soft butter
- 250 g. sugar
- 3 eggs
- 150 g. flour
- 75 g. almond flour or blanched almonds
- 3/4 tsp. baking powder
- 3 large sour apples
- 3 - 4 tbsp. brown cane sugar (can be replaced with regular sugar)
- 1 tsp. cinnamon
- 25 g. almond flakes
Instructions
- Beat the butter and sugar with a hand mixer until white - that is, the sugar must be completely dissolved in the butter. Add one egg at a time, stirring between each addition. Mix the flour, almond flour and baking powder, and carefully fold it into the dough. Put the dough in a greased cake tin (or with baking paper).
- Peel apples, remove the core and cut into thin wedges. Press the apple wedges into the cake batter. It doesn't matter if they are not completely covered in batter. Mix cane sugar (or regular sugar) with cinnamon and sprinkle over the cake. Finally sprinkle with almond flakes.
- Bake in a 170 degree fan oven until done. Baking time can vary from 35 minutes to an hour. When a skewer or similar comes out clean after being inserted into the middle of the cake, the cake is done. Cover with foil if necessary during baking if the cake starts to get too dark.
