Project blog - get started
We have been considering creating a blog for a long time, but we haven't really had the time or quite known what it should contain and how we should do it.
Many of our guests ask for the recipes for our homemade buns and cakes. Instead of sending them by email, we think it would be easier (for both parties) if we could refer to our website.
Of course, much of the time at Rønhave is spent serving guests, making breakfast, cleaning, taking reservations and answering inquiries, but our everyday life also consists of many other things.
We have wanted to gather everything in one place, so now it is.
We hope you enjoy reading along and can use our recipes for a cozy moment or the small projects for inspiration.

An old radio and pictures create atmosphere
Our old grandmother and great-grandmother had a lot of interesting things in the attic and in the barn. Some of it we made a big flea market out of, but some we also kept, and it has helped to add a bit of interest to the rooms. We have especially enjoyed the old books that decorate many of the rooms. Some of the books are from my grandfather's school days, which were during World War I, when all teaching here in Southern Jutland was in German. The beautiful corner cabinet is from my grandmother and grandfather's dining room, so it has a bit of patina from the time when they only heated the living rooms a few hours before they were to be used.


New and fun projects...
At Rønhave we are constantly making improvements. Some more obvious than others. We paint many of our walls several times a year, but hopefully only we can see it. Over the years, it is inevitable that some signs of wear will appear, and that is only a positive sign, which means that we can welcome a lot of happy guests every year :)
We love to go and make small improvements and initiatives that can make a difference, and we are convinced that it is more fun to come again and again and see if you can spot our small projects. After all, we are very lucky that every season we can say hello to both a lot of new guests, but also all our loyal guests who come year after year. Some of us are even lucky enough to say hello to several times a year when they go on a family trip to Rønhave with a few nights' stay.
Rønhave buns
One of the nicest things in the morning is home-baked, warm buns. Here at Rønhave, the buns we serve for breakfast are always home-baked. When we hold events, it is also always our own buns that are served with Rønhaveslagterens pålæg og den lokale æblemost.
We have received a very positive response to the buns and several of our guests have asked for the recipe, which they have of course taken home. Read more below and you can also find the recipe here.
The food culture and interest in health have changed since we started in 2011 and therefore the recipe has also changed a bit, although still with the same basic recipe. The kernels in it vary a little depending on our mood and what we have in the drawer and then cranberries have also found their way into our buns and give a good taste and a little color to the buns.


At Rønhave we are very aware of food waste.
Since the opening of Rønhave in 2011, we have chosen to serve our breakfast at the tables, where each breakfast dish is made personally for each guest who comes and eats. We believe that this provides a good experience for the guest and we have received many words of praise over the years from our guests, who love the personal service and that each dish is freshly prepared and has not been left for several hours. So what should be cold is cold and conversely what should be hot is hot.
By only making breakfast for the number of guests who actually come and eat, we limit our amount of food waste enormously. In addition, when ordering breakfast, each guest can point out if there is something they do not eat, so that we can prepare a dish for each guest. If you are vegetarian, have a gluten allergy, do not eat cheese or a special type of cold cuts, it is possible to change and this also limits what we throw away.
Crumble vs. Granola
Crumble is homemade and has become a great topping for yogurt or ymer. Crumble is a mixture of brown sugar and rye bread crumbs, with a little almond slivers on top, it goes in the oven to give it that sweet and crispy crunch we like. To give a little extra flavor and color, we like to sprinkle some freeze-dried raspberries in too.
Our Granola is a mixture of oatmeal and a few different nuts, seeds and cranberries. In our granola we add cinnamon, cardamom and vanilla which gives a fantastic taste and it is held together with honey and roasted in the oven. Also good on top of skyr, ymer or yoghurt, porridge etc.

The Museum
There is an opportunity to explore Rønhave's small but cozy museum. Here you will find old things from the local area such as tools, old machines, school furniture, lace, an old sleigh and much more from the past. You can also see different types of grain and newspaper clippings from the time when Rønhave served as an experimental station.
The museum is open Tuesday-Saturday from 10 am to 5 pm from May to September. On Thursdays from 10 am to 12 pm, the volunteers who run the museum are there to talk about the old things. Admission is free.
The apple cake
For us, it is important that a cake stays fresh. It must be able to withstand being frozen, thawed and left out for half an hour without becoming dry. That is why we also chose to add some local apples, with a little cinnamon and almonds, it tastes amazing.
Some people might think that it is easier to order cakes and pastries as a bakeoff. It is, but as previously written, we like to put a personal touch on things. We also take great pride in serving something we have made ourselves and creating a homely, cozy atmosphere.

Homemade crispbread
Our homemade crispbread has become a big hit and we are often asked about the recipe, so here it is.
It's super easy to make and a super delicious snack for various occasions. The recipe consists of flour, oatmeal, grains, salt, baking powder, oil and water, which are mixed well together and rolled out thinly and baked until crispy and delicious. You can add some carrots to give a little extra flavor and color.
