Rønhave's homemade buns

One of the nicest things in the morning is home-baked, warm buns. Here at Rønhave, the buns we serve for breakfast are always home-baked. When we hold events, it is also always our own buns that are served with Rønhaveslagterens pålæg og den lokale æblemost.

We have received a very positive response to the buns and several of our guests have asked for the recipe, which they have of course taken home.  

Food culture and interest in health have changed since we started in 2011, so the recipe has also changed a bit, although still with the same basic recipe. The kernels vary a bit depending on our mood and what we have in the drawer, just like the rest of our breakfast dish.

Rønhave buns

 

 

  • Rise time 1.5 Timer
  • Cook Time 20 Minutes
  • Serves 18 stk.

Ingredients

  • 50 gr. yeast
  • 5 dl. lukewarm water
  • 60 gr. sugar
  • 200 gr. Manitobaflour
  • 800 gr. flour
  • 2 eggs + 1 egg to brush on buns
  • 2 dl. oil
  • 80 gr. grains or. cranberries
  • 3 tablespoons. lemonjuice
  • 3 teaspoons. salt

Instructions

  1. Dissolve the yeast in the lukewarm water, add sugar, eggs, oil, grains, lemon juice and salt and stir together.
  2. Then add 200 gr. Manitoba flour and 300 gr. wheat flour and mix together in a mixer.
  3. Set aside, covered, for 15-20 minutes.
  4. Add the rest of the wheat flour and a little more until the dough does not stick to your fingers.
  5. Stir again and cover the dough for 1 hour.
  6. Weigh the buns to 65 gr. per bun and roll the buns so that they have a uniform and airy structure, cover on a baking sheet for 15 min. and turn on the oven to 200 degrees hot air
  7. Brush the buns with egg and sprinkle some sesame seeds on top if desired and bake the buns for 17-20 minutes until they are golden brown on top.
  8. Once the buns have cooled, they can easily be put in the freezer and enjoyed another time.
